Why is Pier 9 Seafood's food cost up 6 points in June?
Read 1,846 June transactions
Pulled Toast POS daily summaries
Compared against the trailing 3 months
Food cost ran 34.1% of sales in June, vs. a 28.2% three-month average. Two things moved it:
1. Seafood pricing — the Sysco fish line rose 19% after the June 12 price update ($6,400 of the swing).
2. A produce delivery on June 21 was received twice but only sold once; $1,180 is sitting in inventory, not COGS.
Net of the duplicate, true food cost is ~31.8%. I parked the $1,180 to a holding account with a memo so the P&L isn't overstated. Want me to draft a vendor credit request?
Yes, draft it.
Vendor credit request — Tovar LogisticsDraft
Requesting a credit for a duplicate produce delivery received June 21 (invoice #TL-4471). Goods were billed twice; one shipment remains in inventory. Credit due: $1,180.00. Reconciled against the June 21 receiving log and Toast POS sales.
